Part 6: Sparkling wine production

It may surprise you, but excellent sparkling wines are also produced by Malokarpatski winemakers using the same "method traditionnelle" as in the French Champagne region.

During the hot summer months, bubbles are refreshing. It may surprise you, but excellent sparkling wines are also produced by Malokarpatski winemakers using the same "method traditionnelle" as in the French Champagne region. At the very beginning is a high-quality still wine, into which the winemaker mixes the exact dose of sugar and yeast after freezing in the winter. He then fills the wine into sparkling wine bottles and waits for the yeast to convert the sugar into CO2. And the bubbles formed in this way then need time. At least 9 months, but sometimes several years, before the sparkling wine matures. After maturation, the resulting sludge is manually shaken on special racks into the neck of the bottle and then shot off after freezing. Remember that real sparkling wine is made only by traditional aging directly in the bottle, when authentic bubbles are created by the fermentation itself. No additional addition of carbon dioxide. No compromises. Just natural bubbles and time.
