And then she doesn't move for a month or two. Tastes wet and doesn't sleep much in rubber boots. Nothing can be underestimated, especially hygiene. Containers, barrels, presses - everything must be clean. When the juice starts to ferment after the grapes have been pressed, he tastes several times a day and calls his fellow winegrowers for advice. They evaluate alcohol, acids, sugars. Is it enough, is it enough or let it ferment? So you already know why it's called a campaign. While the grapes are fermenting, the winemaker does not leave the cellar. He is 100 percent committed. That's when everything is decided.
