Part 10: Crop reduction

Winemakers are experimenting with reducing the grape harvest. They test the highest quality grapes and their maturity can be achieved depending on the place where the vine grows, the variety and the year.

The grape harvest is in full swing, winemakers are enjoying quality grapes. As they say: "It will be a good year!" They know how to achieve higher quality grapes by reducing the harvest. You read that right. The winemaker simply cuts off some bunches of grapes and leaves others. They then gradually ripen, have more concentrated sugar, acids and aromatic substances. It is advisable to regulate the fruit set whenever there are more than two bunches on the plant. The ideal timing is between pea-picking the berries and closing the bunches until the berries are soft. In some wineries, they make something similar to lemon juice from the removed bunches of grapes and use this natural acidulant in salads and vegetables. Winemakers are experimenting with reducing the grape harvest. They test the highest quality grapes and their maturity can be achieved depending on the place where the vine grows, the variety and the year. In general, it is advisable to leave only the number of bunches on the grape vine, as the leaf surface is able to supply assimilates and the root system of a particular vine with water and nutrients without problems.
