The cold wind stings the cheeks, the hands are stiff, the surrounding is a quiet winter landscape. In the vineyard, the first, very important work begins - vine cutting, or shearing. It determines the quality and quantity of the harvest. The viticulturist shortens the old excess vine and it depends on the cultivated variety how many eyes (buds) he leaves. The cut is made by hand with classic or electric vineyard shears between January and March. The right timing is important - ideally when the severe frosts have passed and before the vines wake up in spring. It's a trick - by cutting, you can determine how much energy the plant should put into growth and how much into the harvest of beautiful and healthy bunches of grapes.
