When work is not in the vineyard, it can certainly be found in the cellar. The wine sleeps in stainless steel tanks and oak barrels and must be checked continuously throughout the year. Release from the tap or strain into a glass, smell and roll on the tongue. Wait until the wine connects with the senses and tells whether it needs to be twisted, sulphured, mixed, filtered. The winemaker makes love to it, observes it against the light, evaluates it with every sip, makes notes, decides on the future form of the wine. It is alchemy - wine from the same variety can have a different taste every year, and it is the winemaker who decides with his skill and experience. He often verifies his perceptions by testing samples in the laboratory. Year-round wine control is most intensive in the fall, when the must begins to ferment, and continues after the end of fermentation - during wine bottling, clarification, stabilization and filtration.
